This 10-year-old single grain was distilled at Ireland’s Cooley Distillery and matured in a combination of ex-Bourbon and Rye whiskey casks. The nose has fruity notes of peaches and pears, along with honey, vanilla, and dried grass clippings. The taste has notes of honey, caramel, vanilla, tree fruits, and gentle spices. The finish is long with a nice touch of oak along with gentle spices and hints of tree fruits. Very nice. (March, 2022)
