The Irishman Cask Strength 2017. Image courtesy Walsh Whiskey Company.This whiskey combines Irish Single Pot Still and Irish Single Malts matured in first-fill ex-Bourbon casks. The nose is warm, woody, and sweet with oak, cedar shavings, honey, vanilla, peaches, and red apples. The taste has good spices, honey, raisins, and dried apple chips along with a nice oakiness. The finish is long and full-bodied with a slightly astringent mouthfeel and  good notes of honey, oak, and raisins. Overall, excellent balance and complexity! (November, 2017)
