Kristy Booth-Lark is the future of Australian whisky. She’s the daughter of Lyn and Bill Lark, the “godfather” of Australian whisky who started the Australian craft distilling movement with their Lark Distillery in Tasmania two decades ago. Kristy struck out on her own and opened Killara Distillery in Tasmania, and this 2-year-old bottling for That Boutique-y Whisky Company’s debut Australian Series was actually distilled on her test still at home while the distillery was still under construction. It was matured in a Tawny (Australia’s equivalent of Port) wine cask, and the nose has notes of banana bread, anise, honey, ginger, and a touch of brown sugar. The taste is thick and fruity with touches of tangerine, mango, and banana balanced by subtle spices, honey, and brown sugar underneath. The finish is long and well-balanced, with baking spices that come alive to complement the fruitiness for an outstanding and complex dram! (April, 2021)
