This 100% rye whisky from Still Waters Distillery in the Toronto suburbs comes from a mix of malted and unmalted rye, and the nose is aromatic and spicy with clove, cardamom, dried leaves and grass, dried corn stalks, ginger root, and brown sugar. The taste has intensely spicy notes of cinnamon, clove, black pepper, and chili powder that last and last, overwhelming the palate and any other balancing notes – but still very pleasant to drink. The finish is long and dry with lingering spices. (November, 2015)
