This rye spent 5 years maturing in new charred oak barrels, then the final 10 months in barrels previously used for Kingston Black hard cider. The nose has notes ion red apples, peaches, apricots, walnuts, and touches of honeycomb and brown sugar. The taste has good spice notes with a nice balance from caramel covered apples, honey, baking chocolate, and molasses cookies. The long finish has spices that linger nicely with underlying apple, cocoa, and molasses notes. (February, 2021)
