The 2020 Redbreast Dream Cask limited-edition release is an offshoot of the Redbreast 27 released earlier in the year. The casks that went into the Dream Cask release were selected during the process of creating the initial release of the 27-year-old, with 28-year-old whiskies matured in ex-Bourbon, Oloroso Sherry, and a Ruby Port-seasoned cask. After blending, the whiskey was returned to that Ruby Port cask and allowed to marry for several months before bottling.
The nose has notes of fresh berries, brown sugar, red grapes, hints of plums and apricots, and subtle spices in the background. The taste is fruity, vibrant, and intense with raspberries and a hint of strawberries, red grapes, baking spices, and a hint of molasses underneath that adds complexity. The finish is long, fruity, and luscious with subtle hints of spice and oak. Excellent! (May, 2020)
