Image courtesy Pugilist Spirits.This whiskey combines spirit distilled and matured at Ireland’s West Cork Distillers with rye finishing casks from Tamworth Distilling in New Hampshire. The nose is mellow and subtle with notes of honey, straw, dried flowers, and dried fruits. The taste has good spicy notes of white pepper, allspice, and a hint of clove along with straw, dried flowers, honey, and a hint of black tea. The finish is long and dry with subtle spices and hints of straw and dried flowers. Very consistent from nose to finish. (May, 2017)
