Image courtesy Irish Distillers Pernod Ricard.This classic Single Pot Still Irish Whiskey started off in a combination of ex-Sherry and American Oak casks, and a loophole in Irish law allowed Midleton’s team to finish it in French Chestnut casks – Ireland does not require that whiskies be matured exclusively in oak casks, unlike Scotland.

The nose has a good balance of clove and allspice notes along with cocoa, coffee beans, and touches of fresh rosemary and spearmint. The taste is spicy and warming with notes of clove, allspice, roasted chestnuts, and a hint of maltiness while turning drier leading into the long finish. Gently fading spices and a nice oakiness are balanced by hints of black tea and honey as the whiskey fades away. Excellent! (March, 2017)
