Freddie Noe’s 2021 edition of Little Book blends young two and three-year-old Kentucky Bourbons with older ones up to 15 years old. The nose has notes of caramel, honey, a hint of molasses, charred oak, brown sugar, and a hint of vanilla. The taste is spicy and intense with a nice touch of caramel-covered apples underneath. Clove, black pepper, and a hint of cinnamon candies dominate, while honey, brown sugar, and vanilla come out as the spices fade. The finish is long and well-balanced with touches of red apples, caramel, and spices. Excellent! (September, 2021)
