Photo ©2020, Mark Gillespie/CaskStrength Media. This is a 6-year-old Bottled in Bond Rye made with grain from Colorado’s San Luis Valley, and the nose has a good balance of baking spices and garden herbs, along with honey, vanilla, and charred oak. The taste has good notes of clove, allspice, and cinnamon along with brown sugar, honey, and hints of garden herbs that come out near the finish. Adding water opens up touches of apples and dried flowers for a nice complexity. The finish is long and spicy with a good balance of lingering spices and herbs with a subtle sweetness underneath.
