Laws Whiskey House in Denver makes this wheat whiskey from a mashbill of 50% raw soft white wheat and 50% malted soft white wheat grown on the Cody Farm in southern Colorado, and the 2021 release is five years and eight months old. The nose is aromatic and warm, dusty and dry with a kiss of smokiness, charred oak, toasted bread, caramel, tobacco, and dried flowers. The taste is fruity with orange peel, white pepper, a hint of clove, fresh berries, and straw. Adding water opens up chocolate and caramel notes on the palate, too. The finish is long and spicy with a nice balance of sweet notes underneath. Wow! (June, 2021)
