This Irish whiskey from Chapel Gate Whiskey Company was produced in collaboration with the “Stories & Sips” online Irish whiskey group led by Barry Chandler, and the group’s members were able to follow the creation of this whiskey through the blending and bottling process. It’s a blend of Irish malt and grain whiskies, and the nose has notes of butterscotch, straw, brown sugar, and caramel. The taste has subtle baking spices along with butterscotch, caramel, honey, and a hint of coconut. The finish has lingering spices, dried fruits, caramel, and butterscotch for a well-balanced, pleasing dram. (April, 2021)
