This whiskey from Colorado’s Marble Distilling Company gets its name from Hoover, the one-eyed dog who lost his other eye in a fight with a mountain lion. The nose has notes of caramel, vanilla, oak, leather, and tobacco. The taste is spicy with cinnamon ad black pepper notes balanced by honey, caramel, vanilla, and a hint of linseed oil. The finish is long with subtle spices and a hint of oak. (July, 2021)
