Grace O'Malley Irish Whiskey. Image courtesy Inis Tine Uisce Teoranta.This whiskey gets its name from Ireland’s legendary “pirate queen,” and is blended from whiskies distilled at Great Northern Distillery and Cooley matured for between 3 and 10 years with some in Rum casks along with ex-Bourbon and French Oak. The nose has a nice maltiness along with notes of honey, butterscotch, and a hint of dried fruits. The taste has a good balance of fruitiness and subtle spices, a touch of oak tannins, and a hint of almond oil. The finish is long and well-balanced with subtle spices, toasted vanilla, and a good fruity character. (June, 2020)
