Colby and Ashley Frey select their favorite barrels to be bottled as “Distiller’s Reserve” single barrels, and Barrel #589 has touches of chocolate-covered cherries on the nose along with subtle spices, honey, a spicy hint of horseradish, caramel apples, and a dry touch of sawdust. The taste is dry and astringent at first, followed by a burst of spices with black pepper and chili powder. The spices fade to reveal dried fruits and a touch of chocolate-covered cherries. Adding water opens up the fruitiness and brings out more texture in the mouthfeel. The finish is long, dry, and subtle. Excellent! (September, 2021)
