Image courtesy Cooper River Distillers.This is the first aged whiskey from Cooper River Distillers in Camden, New Jersey, and the nose is spicy with notes of allspice, clove, black pepper, wood shavings, sawdust, and honey. The taste is spicy with clove, cinnamon, linseed oil, and touches of butterscotch and spearmint. The finish turns dry and slightly astringent with a lingering touch of clove, linseed oil, butterscotch, burnt caramel, and dark chocolate. An excellent debut! (May, 2016)
