This Irish whiskey from Clonakilty Distillery was finished in quarter-size Rye casks from Virginia’s Catoctin Creek Distilling, and the nose has rye-forward baking spices, dried grass clippings, honey, vanilla, and a hint of citrus. The taste is thick and creamy with a good buildup of clove, cinnamon, and white pepper complemented by honey and dried fruits in the background. The finish is long with lingering spices and a hint of citrusy tartness. (August, 2022)
