Starward Distillery in Melbourne is one of Australia’s largest whisky distilleries, and this is its first bottling for That Boutique-y Whisky Company’s Australian Series. It’s three years old and was matured in one of Starward’s re-charred Australian red wine casks. The nose has touches of cooked fruits, banana bread, subtle spices, and toasted oak. The taste has notes of red grapes, plums, baking spices, raisins, and a hint of molasses. The finish is long, fruity, and slightly astringent. Wow! (April, 2021)
