This single pot still Irish whiskey is one of the few finished in casks made from Irish Oak, with the trees coming from near Glendalough’s distillery in County Wicklow. The nose is aromatic and unique with touches of old leather, shoe polish, milk chocolate, toasted caramel and marshmallows, along with hints of garden herbs and charred oak. The taste is subtle at first, then comes alive with spicy notes of clove, cinnamon, and allspice balanced by honey, toasted caramel, charred oak, and dark honey. Adding water brings out hints of toffee and pears on the nose while stretching out the rise of the spices. The finish is long and spicy, yet with a nice underlying sweetness. (March, 2021)
