Yes, Tennessee Whiskey is actually Bourbon…and this one proves it. George Dickel/Cascade Hollow head distiller Nicole Austin decided that many of her maturing barrels didn’t have the same taste profile that the Dickel Tennessee whiskies have, but had a classic Bourbon flavor. Instead of blending them away, she created the 8-year-old Dickel Bourbon. The nose has notes of peaches, caramel-covered apples, honey, vanilla, and soft spices. The taste has a good balance of fruity sweetness with subtle spices, peaches, apples, and apricots complemented by touches of allspice, vanilla, and oak tannins. The finish is long, gentle, and “more-ish.” Excellent! (June, 2021)
