As you might be able to tell from the name, this Irish single malt from Boann Distillery is finished in Pedro Ximenez Sherry casks. The nose has a prominent Sherry influence with raisins, oranges, brown sugar, toffee, and a hint of cherries. The taste is thick and well-balanced with touches of oak, raisin bread, brown sugar, a nice maltiness, and a hint of nuts. The finish is long and well-balanced with dried fruits, chocolate fudge, and nuts. (June, 2021)
