Image courtesy Still Austin Distillery.This is about as close to a 100% Texas whiskey as one can get, and that’s only because there are no cooperages making barrels in the state. Still Austin uses Texas-grown corn, rye, and malted barley, along with a “slow-water reduction” process that sees a little bit of water added to barrels each month to compensate for the wild swings in the Hill Country climate. The nose has notes of caramel apples, honey, peaches, a soft oakiness, cocoa beans, and a hint of tobacco. The taste is sweet at first with chocolate-covered cherries followed by a burst of black pepper and mesquite spices while honey, caramel, and vanilla provide complexity in the background. The finish has soft spices and a lingering touch of those same chocolate-covered cherries. Nice! (September, 2020)
