Velvet Cap Irish Whiskey. Image courtesy Blackwater Distillery. This whiskey from Ireland’s Blackwater Distillery uses sourced whiskey married in casks that had previously been used for both rye whiskey and stout beer. The nose is malty with red apples, honey, toasted caramel, cooked fruits, and a hint of oatmeal. The taste is thick, oily, and fruity with red apples, dried fruits, touches of clove, allspice, and ginger, with hints of honey and caramel in the background. The finish is long and well-balanced with lingering spices and fruity touches. (May, 2020)
