Image courtesy Talnua Distillery.The Irish perfected the art of Single Pot Still whiskey using a combination of malted and unmalted barley, and Colorado’s Talnua Distillery used that same technique to distill Carrowdair. It’s just 15 months old, and would be far too young to legally be called whiskey in Ireland, but it certainly doesn’t taste young and immature.

The nose has notes of caramel apples, honey, and soft spices. The taste has a slow buildup of traditional pot still spices with clove, black pepper, and a hint of cinnamon complemented nicely by honey, vanilla, red apples, and caramel. The finish is long with lingering spices and a hint of fruit. I can’t wait to see how this whiskey matures over the years! (July, 2019)
