Sullivan's Cove American Oak Single Cask. Photo ©2019, Mark Gillespie/CaskStrength Media. This 13-old single cask was matured in an ex-Bourbon barrel, and the nose has toasted oak, vanilla, and honey along with a nice malty touch of barley sugar for a delicate and simple aroma. The taste is much different, though, with black pepper and chili powder spiciness complemented nicely by barley sugar, honey, and a hint of dried fruits. The finish is long, tingly, and almost effervescent with a nice balance of spices and dried fruits. Outstanding! (August, 2019)
