Redbreast Dream Cask Pedro Ximénez Edition. Image courtesy Irish Distillers. This 2019 Dream Cask edition came from four different casks originally filled into ex-Bourbon barrels between 1985 and 1998, with two of those casks refilled into Pedro Ximénez and Oloroso Sherry casks in 2002. All four casks were then married into the Pedro Ximénez cask for a final period of maturation.

The nose has notes of dried fruits, hints of molasses and licorice, subtle touches of baking spices, almond oil, hazelnut, and vanilla. The taste is thick and chewy with tree fruits balanced by clove, cinnamon, a hint of licorice, plums, and raisins. The finish is long, fruity, and vibrant with hints of spice. (May, 2019)
