Image courtesy Cru & Terroir.This single malt from Guillon Distillery in France’s Champagne region was matured for 5 years in White Burgundy wine barrels and an additional 3 years in Banyuls wine casks, and was fermented using traditional Champagne wine yeast.

The nose is light and aromatic with lemon zest, allspice, hints of honey and vanilla, green grapes, and sandalwood. The taste starts off tart and peppery, followed with hints of raisins and prunes, allspice, a hint of clove, and honey notes. The finish is lingering and peppery. (January, 2015)
