This Dalmore bottling spent 12 years in a refill ex-Bourbon cask, then a few final months in a Pedro Ximenex sherry cask.
The combination works well, with a nose full of toffee, figs, brown sugar, caramel, red grapes, roasted cashews, and dark chocolate. The taste is thick, mouth-filling, and well-balanced with mild cinnamon and white pepper spices, toffee, and a sherry/brandy-like influence of Christmas cake, sultanas, honey, and cooked fruits. The finish is long and sweet with a cloying touch of cooked fruits. One of the best independent bottlings of Dalmore that I’ve tasted! (September, 2013)
